Greetings Fanlala! Dylan here with my ever-trusted Lunchbox. Today’s dessert may sound odd, but stay with me. It’s not only one of the most delicious treats you’ve never tried, but it’s a super-healthy delivery from Dylan’s Lunchbox!
Lavender Lemon Cookies
Lavender cookies? Sounds interestingly unique, doesn’t it?
I found out about this phenomenal new healthy cookie recipe the other day on Giada At Home. World famous Food Network star, chef Giada De Laurentiis, created a lavender lemon cookie recipe that not only sounds sensational in its name, but the taste is to die for.
If you are looking to make an easy, healthy, and guilt-free dessert for you and your family and friends, I recommend this one. These lavender lemon cookies are like no other cookie out there, literally. The light flavor truly hits the spot, especially on a hot summer day when a rich dessert doesn’t sound as appealing.
Here is Giada De Laurentiis’ famous Lavender Lemon Cookie recipe - as she describes it.
You won’t be disappointed.
YOU WILL NEED:
3/4 cup of all-purpose flour
1/2 cup of almond flour
2 tablespoons of arrowroot - (if you can find this)
2 tablespoons of sugar
1 tablespoon dried lavender (try your local health food store such as “Mrs. Greens” or “Trader Joes”
1/2 teaspoon of sea salt
1/2 of teaspoon baking soda
1 stick unsalted butter (try organic!) - cut the butter into 1/2-inch pieces
1 large lemon (zested)
2 tablespoons of pure honey
1 tablespoon of fresh lemon juice
DIRECTIONS:
1- Preheat the oven to 350 degrees F.
2- Line a baking sheet with parchment paper.
3- In a food processor, blend together the flour, arrowroot, sugar, lavender, salt and baking soda.
4-Add the butter and lemon zest to the food processor- and blend all ingredients until it fine
5-Add the honey and lemon juice. Continue to blend in the processor until the mixture forms a soft dough.
6-Form the dough into 1-inch round balls and press to make flat circles
7-Arrange in a single layer on a prepared baking sheet.
8-Bake until the cookies are a light brown color around the edges (OR 9 to 11 minutes.)
9-Cool for 5 minutes.
10- Transfer to a dish- and cool completely (about 15 minutes.)
